MOUTARDE
DE CHARROUX, "THE STAR GRAIN MUSTARD"
All the tastes are in Charroux. Vanished at the beginning of the
last century, this mustard became again, since 1990,one of the
speciality and over all the best tourist representative of this medieval
village. Restauring, first the local production of walnut oil, Claude et
Simone Maenner, agricultural engineer and dietician, have reactived the
manufacturing of this mustard in the respect of the traditional
expertise: grains are ground with a millstone and mixed with vinegar of
Saint Pourçain white wine (
tressalier).
After
a maturing of few weeks, this mustard is ready to be conditioned. As
well as aromatic various (green peper, basilic, tarragon and so on)
others mustards have been created in accordance with Master chief,
Michel Troisgros, like “la pourpre de Saint Pourçain (made with red wine
and juice of grapes).
Mustard of Charroux, one of the best products of France, obtained
numerous gastronomic awards. Family Maenner also offers others local
products as “Les crêtes de coq au naturel” or “Les roupettes de coq en
gelée” (!) and also a lot of tasty oils.
